肯尼亞嚴格的生豆分級制度:看「目數(Size)」 與很多產區以海拔或瑕疵率分級不同,肯尼亞官方(奈洛比咖啡交易所 NCE)主要依據咖啡生豆的顆粒大小(Screen Size)來分級。雖然豆子大不代表風味絕對好,但通常大顆的豆子發育更成熟、密度更高。 AA 等級: 最高規格的常規出口品。 篩網目數 17–18目(直徑約 7.2mm 以上)。豆體大而飽滿,密度極高,通常具備最濃郁的風味爆發力。 AB等級 產量最大的主力等級。 由 A 級(16目)和 B 級(15目)混合而成。雖然視覺上不如 AA 震撼,但許多高海拔小農的 AB 批次,其杯測風味和細緻度完全不輸 AA,性價比極高。 PB (Peaberry) 等級 圓豆(小珍珠)。 屬於咖啡豆的自然變異,原本一整個果實內有兩瓣扁平的豆子,PB 則融合成單顆圓形豆(約佔產量 5-10%)。因其豆體圓潤,烘焙時受熱極其均勻,風味往往非常濃縮、甜感強烈。...
