The founder first learned about coffee bean roasting in Australia, then lived in Taiwan to understand local roasting characteristics, before returning to Hong Kong to establish an online coffee bean roasting shop. In recent years, he has visited Shanghai multiple times to study the local roasted coffee market.
We have combined the diversity of Australia with the delicacy of Taiwan, and through repeated testing and adjustments tailored to the keen taste buds and dietary habits of Hong Kong people, we have finally found the "exclusive roast level" most suitable for Hong Kong.
From selecting SCA 85+ grade green beans to small-batch roasting personally monitored by us, our roasting philosophy, which spans across three regions, is dedicated to finding that one perfect cup for Hong Kong.

Considering Hong Kong's humid climate, local water quality, and the expectations of Hong Kong people for coffee, we have conducted countless cuppings to refine a "Hong Kong-style Specialty Light-Medium Roast" exclusive to Nok Bay Coffee.
To maintain the highest quality, we insist on using only green beans with an SCA score of 85 or above and exclusively perform "small-batch local roasting."
