To showcase the most authentic Guji terroir, Gelana Estate employs the highest standards of washed processing:
1. Rigorous Selection: Multiple floatations are performed on the day of harvest to remove under-dense cherries.
2. Low-Temperature Fermentation: Fermentation is carried out with clean water to precisely remove mucilage, preserving bright acidity.
3. African Drying Beds: Slow drying on elevated beds with regular turning allows moisture and flavors to achieve a stable balance.
【Cupping Notes】
• Dry Aroma: Fresh jasmine and citrus peel aroma.
• Sip: The first sip reveals light floral and citrus acidity, followed by a penetrating peach-like sweetness. The mouthfeel is extremely smooth, with bright but not sharp acidity. The mid-to-end palate transitions to a charming Earl Grey tea aftertaste. Overall cleanliness is excellent, with distinct layers.
