【Estate Story: Anasora at the Edge of the Clouds】
This coffee comes from the famous Ana Sora Estate in the Guji region of Ethiopia. The estate owner, Israel Degfa, is a local legend who is committed to operating a single estate, striving for ultimate traceability and consistency in coffee flavor.
The Extreme Altitude of 2,350 Meters
Ana Sora Estate is nestled high in the clouds, making it one of Ethiopia's highest-altitude coffee-producing areas. The significant diurnal temperature variation causes the coffee cherries to grow slowly, giving this coffee its concentrated sugar and dense flavor molecules, much like a peach.
Enzyme Washed Process
We have selected a fresh air-freighted lot and applied the innovative "Enzyme Washed" process. After being washed with pure Turo River water, the involvement of natural enzymes precisely preserves the original floral and fruity aromas of the region, while elevating the sweetness and cleanliness to new heights.
【Cupping Notes】
* Dry Aroma: Bright peach and white floral aroma.
* Wet Aroma: When warm, it emits waves of ripe peach and malty sweetness.
* Sip: The first sip reveals a rich white peach and peach juice sensation, with lively but not sharp acidity. The mid-palate transitions to a mellow maltose sweetness, and the finish reveals a fresh oolong tea note. The overall mouthfeel is extremely round and smooth, like a carefully crafted honeyed fruit tea.

* Water Temperature: 91°C - 93°C
* Brew Ratio: 1:15
* Grind Size: Medium-fine grind (EK43 approx. 7-8 clicks / Hand grinder approx. C40 24-26 settings)
