Estate owner Esteban Sanches is known locally as "Dr. Machine." From the small wet processing equipment in the mill to the design and assembly of the roasters and hullers, he personally handles everything. 3. Unique "Raisin Honey Process"
This bean utilizes the highly time-consuming "Raisin Honey Process." During drying, the coffee cherries undergo a stage similar to raisin formation, allowing the sugars and aromas from the pulp to deeply penetrate the green beans. This processing method brings a flavor different from typical Geisha – in addition to the characteristic floral notes, it offers a richer, honey-like sweetness, full-bodied layers, and a lingering aftertaste.
💡 A Little Encyclopedia on Processing Methods
The "Raisin Honey Process" is an advanced version of the honey process. Coffee cherries are first dried until they resemble raisins, then pulped and dried a second time. This process requires extremely precise control of temperature and humidity, and due to its complexity, it imparts superior sweetness and a rich fermented aroma to the coffee.
