Ethiopia

Guji is located at an altitude of 1,800-2,300 meters. The volcanic black soil (Vertisol) is deep and fertile, with a large temperature difference between day and night, which delays the ripening of coffee cherries and accumulates high sugar content and complex flavor substances.

Sub-region highlights:

Hambella: famous for its "Oiran" coffee, located at 2,100-2,300 meters above sea level, with flavors of strawberry, tropical fruit and red wine fermentation

Shakisso: Citrus honey notes dominate, with bright acidity like lemon tea.

Honey processing technology**

G1 grade: The highest quality standard in Ethiopia, representing a defect rate of less than 3% per 300 grams of green beans, a cupping score of more than 85 points, and both cleanliness and flavor complexity.

Honey Process Features:

Core technology: After removing the peel, 40-60% of pectin is retained, and controlled fermentation and trellis sun drying are carried out to enhance the sweetness and fruity aroma, while avoiding the risk of off-flavors caused by the sun drying method.

Guji honey processing innovation:

Fermentation control: Leave it to stand for 12-24 hours indoors to initiate the enzymatic reaction and release aroma precursors such as lychee and rose.

Drying stage: Slow drying in African sheds for 10-14 days, turning over every 2 hours to maintain uniform dehydration of the pectin layer and avoid excessive fermentation.

Brewing and Application Recommendations*

- **Hand-in parameters**:

  - Powder-water ratio 1:16, water temperature 91-93℃, medium-fine grinding (C40 scale 24-26), three-stage water filling, total time 2 minutes and 10 seconds.

  - **Flavor enhancement techniques**: Inject water in the front to accelerate the release of sour aroma, and cool down to 88℃ in the back to extend the extraction of sweetness.

- **Italian apps**:

  - The concentration ratio is 1:2 (18g powder → 36g liquid). Pairing with milk can highlight the caramel and vanilla flavors, and the latte has a "fruit cake" layer.
