Nyeri is famous for its volcanic red soil and high altitude (1200-2300 meters). It is one of the best coffee producing areas in Kenya and is famous for producing high-quality Arabica coffee.
Nyeri is located in central Kenya, close to Mount Kenya, the second highest peak in Africa, at an altitude of 1,200-2,300 meters. The high altitude, fertile volcanic soil, abundant rainfall and large temperature differences between day and night provide ideal growing conditions for coffee beans.
The volcanic soil is rich in minerals, which helps the coffee beans develop complex flavors.
The year is divided into rainy season and dry season, with moderate rainfall and sufficient sunshine, which is conducive to the slow maturation of coffee cherries and the accumulation of more sugar and acid.
Kenyan coffee is famous for its unique double-washed processing method:
1. Peeling and pulping: After the coffee cherries are mechanically peeled, the mucilage is left for the first fermentation (12-24 hours).
2. Cleaning and secondary fermentation: After cleaning the mucus, soak and ferment again for 12 hours to enhance the acidity and cleanliness.
3. Washing and Drying: Finally rinse with clean water and dry on raised beds to ensure the beans dry evenly.
This processing gives the coffee bright acidity and a highly pure flavor.
Pour over coffee (V60/cake cup): water temperature 90-93℃, powder-water ratio 1:15, medium-fine grinding, segmented extraction to highlight the acidity and fruity aroma.
- Cold brew: highlights the sweetness and juice, and reduces the sharpness of the acidity.
- Avoid over-extraction: Kenyan beans have obvious acidity, and over-extraction can easily produce bitterness.
Nyeri coffee beans are the benchmark of Kenyan coffee.
